MAEDAYA serves these savoury "pancakes" exclusively at lunchtime. Hugely popular in Japan, they're perfect for izakaya-style dining - that is, a snacky but filling morsel to enjoy between sips of beer and shots of sake. The thick base is made from batter and cabbage and after being fried it's topped with a teriyaki-style sauce, sweet mayonnaise, spring onion, pickled ginger and chicken (or, if you choose, meat, seafood or vegetables). Cheese is optional, and while it might sound a little odd, they don't overdo it, and it works a treat.
